Aunt Jan’s Three Bean Salad.

This is a beautiful looking salad and always seems to disappear!

Directions:

  • Drain chickpeas, red beans and black beans.

  • Chop and dice the chili pepper, scallions, tomatoes, shallots and green pepper. Place in a bowl together.

  • Mix garlic, salt, pepper, vinegar, mustard & lemon juice together. Season with salt and pepper.

  • Add oil and whisk together.

  • Gently fold in beans.

  • Marinate for at least 30 minutes. Overnight if possible.

Ingredients:

  • 1/2 cup chickpeas (cooked)

  • 1/2 cup red kidney beans (cooked)

  • 1/3 cup black beans (cooked)

  • 1/4 tsp. chili pepper, finely chopped

  • 2 scallions, chopped

  • 12 cherry tomatoes

  • 1 shallot, finely chopped

  • 1 green pepper, diced

  • 1 clove of garlic, minced

  • 1 Tbsp. tomato paste (optional)

  • 3 Tbsp. red wine vinegar

  • 1 Tbsp. dijon mustard

  • 7 Tbsp. olive oil

  • Juice of one lemon

  • Salt & Pepper to taste
