Aunt Jan’s Three Bean Salad.
This is a beautiful looking salad and always seems to disappear!
Directions:
Drain chickpeas, red beans and black beans.
Chop and dice the chili pepper, scallions, tomatoes, shallots and green pepper. Place in a bowl together.
Mix garlic, salt, pepper, vinegar, mustard & lemon juice together. Season with salt and pepper.
Add oil and whisk together.
Gently fold in beans.
Marinate for at least 30 minutes. Overnight if possible.
Ingredients:
1/2 cup chickpeas (cooked)
1/2 cup red kidney beans (cooked)
1/3 cup black beans (cooked)
1/4 tsp. chili pepper, finely chopped
2 scallions, chopped
12 cherry tomatoes
1 shallot, finely chopped
1 green pepper, diced
1 clove of garlic, minced
1 Tbsp. tomato paste (optional)
3 Tbsp. red wine vinegar
1 Tbsp. dijon mustard
7 Tbsp. olive oil
Juice of one lemon
Salt & Pepper to taste
