Mom’s Cheesecake.
Light and fluffy!
Directions:
Crust: Melt butter, add graham cracker crumbs, cinnamon and sugar. Mix until crumbly. Reserve 1/4 cup of mixture. Put the rest into a springform pan.
Filling:
Mix in bowl cream cheese, sugar and beat in eggs one at a time. Add vanilla. Fold in sour cream. Pour mixture on top of crust. Sprinkle reserve crumbs on top of filling around edges.
Bake at 375F for 30 minutes. Shut oven off - do NOT open door. Leave cake in oven for 2 hours.
Let stand overnight or at least 8 hours in refrigerator before serving.

1 stick butter
1 1/2 cup graham cracker crumbs
2 tsp. cinnamon
3 tbsp. sugar
Filling:
1 cup sugar
3 eggs
2 (8 oz.) packages cream cheese
2 tbsp. vanilla
1 1/2 pint sour cream
