Mom’s Buttermilk Pancakes.

Breakfast staple with warmed pure maple syrup.

Makes: about 9 pancakes (4”)

Directions:

Stir together flour, baking soda, baking powder, salt and sugar. Make a well in center of mixture.

Stir together, in separate bowl, egg, buttermilk and oil. Add to dry ingredients stirring just until moistened.

Pour 1/4 cup batter for each pancake on to a hot lightly greased griddle. Cook pancakes until tops are covered with bubbles and edges look cooked. Turn and cook other side.

Serve with warmed maple syrup.

  • 1 1/4 cups all-purpose flour

  • 1/2 tsp. baking soda

  • 2 tsp. baking powder

  • 3/4 tsp. salt

  • 2 tbsp. sugar

  • 1 large egg

  • 1 1/4 cup buttermilk

  • 3 tbsp. vegetable oil
