Fresh Strawberry Pie.

Beautiful and delicious!

Directions:

Mash enough strawberries to measure 1 cup. Stir together sugar and cornstarch. Gradually stir in water and crushed strawberries. Cook over medium heat until mixture thickens and boils. Boil and stir for 1 minute; then cool.

Beat cream cheese until smooth. Spread on bottom of cooled pie shell. Fill shell with remaining berries. Pour cooled berry mixture over top. Chill for at least 3 hours.

Variations: 6 cups of raspberries or 5 cups of peaches can be substituted for strawberries. (Granulated ascorbic acid can be used to prevent peaches from darkening.)

  • 9 inch baked pie shell

  • 6 cup fresh strawberries (about 1.5 quarts)

  • 1 cup sugar

  • 3 tbsp. cornstarch

  • 1/2 cup water

  • 1 (3 oz.) package cream cheese, softened
