Zucchini Nut Bread.

Tasty snack.

Directions:

  • Beat eggs and gradually beat in sugar then oil.

  • Combine dry ingredients and add to egg mixture. Add zucchini and mix.

  • Stir in raisins, nuts and vanilla.

  • Turn into 2 greased loaf pans.

  • Bake at 350F for 55 minutes

  • Let stand 10 minutes

Ingredients:

  • 1 cup chopped walnuts

  • 4 eggs

  • 2 cups sugar

  • 1 cup vegetable oil

  • 3 1/2 cup flour

  • 1 tsp. cinnamon

  • 1 1/2 tsp. baking soda

  • 1 tsp. salt

  • 3/4 tsp. baking powder

  • 2 cups grated zucchini

  • 1 cup raisins

  • 1 tsp. vanilla
