Zucchini Nut Bread.
Tasty snack.
Directions:
Beat eggs and gradually beat in sugar then oil.
Combine dry ingredients and add to egg mixture. Add zucchini and mix.
Stir in raisins, nuts and vanilla.
Turn into 2 greased loaf pans.
Bake at 350F for 55 minutes
Let stand 10 minutes
Ingredients:
1 cup chopped walnuts
4 eggs
2 cups sugar
1 cup vegetable oil
3 1/2 cup flour
1 tsp. cinnamon
1 1/2 tsp. baking soda
1 tsp. salt
3/4 tsp. baking powder
2 cups grated zucchini
1 cup raisins
1 tsp. vanilla
